Mexican Masa Muffins
Try this really delicious Mexican flour muffin recipe the next time you make muffins.
Serves: Makes 12 small, or 6 large muffins
Prep Time: 10 minutes
Cook Time: 15-20 minutes


1 cup masa, (Mexican flour)
2 teaspoons baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup buttermilk
1 egg, beated
2 tablespoons corn oil

Sift dry ingredients together. Add buttermilk, egg and oil. Stir just until all ingredients are mixed. Fill greased muffin tins half full. Bake at 450 degrees for 15-20 minutes.
