Lobster Newburg
If you love lobster, then this is the perfect meal for you.
Serves: 6
Prep Time: 15 minutes
Cook Time: 2 minutes


1/4 cup butter
1 tablespoon cornstarch
1 1/2 cups cream
3 egg yolks, beaten
1 teaspoon salt
1/4 teaspoon cayenne
1/4 cup (or less) sherry
3 cups lobster meat, cooked, diced
Parsley, chopped

Melt butter over low heat. Stir in cornstarch. Add cream and cook until thickened, stirring constantly. Add egg yolks, salt, cayenne and sherry; cook and stir 2 minutes. Stir in lobster. Before serving, sprinkle with paprika and chopped parsley. Serve over hot buttered toast.
