Seafood Salad Alcorn
This is a great seafood salad to serve as a main coarse if you are having a party.

1 cup lobster meat, cooked
1 cup lump crabmeat
3 cups shrimp, cooked and shelled
2 avocados, ripe
1 cup mayonnaise
1 teaspoon onion, grated
3 tablespoons lemon juice
1 cup celery, diced

Cut seafood into bite-sized chunks. To make dressing, mash avocado pulp; add mayonnaise, grated onion, lemon juice and pepper. Toss seafood and celery in dressing. Spoon salad onto lettuce leaves. Garnish with asparagus spears, tomato wedges and ripe olives if desired.
