Packages of the Southwest
These appetizer packages are loaded with flavor.

3 medium tomatoes, peeled, seeded, and diced
2 fresh jalapeno peppers, seeded and diced
1 teaspoon garlic, minced
1/2 cup onion, minced
1 tablespoon fresh cilantro, chopped
1/2 cup tomato juice
salt
2 tablespoons olive oil
1 cup onions, chopped
1 tablespoon garlic, minced
2 cans (ounces each) mild green chilies, drained and chopped
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
3/4 teaspoon ground cumin
2 large eggs, lightly beaten
8 ounces Monterey Jack cheese, shredded (2 cups)
2 tablespoons all-purpose flour
1 pound frozen phyllo sheets, thawed
1 cup (2 sticks) unsalted butter, melted
2 tablespoons chili powder




Salsa Fresca: Combine tomatoes, jalapenos, garlic, onin, cilantro, and tomato juice in a serving bowl. Season with salt. Cover and chill. bring to room temperature before serving.

Packages: heat olive oil in a large skillet. Add onins and saute until translucent. Add garlic and saute 2 minutes. Add chilies, salt, cayenne, and cumin. cook until liquid has evaporated. Cool to room temperature. Add eggs to cooled onion mixture. Toss cheese and flour together in a small bowl. Add onion mixture.. Combine well.
Unwrap phyllo sheets and cover with a damp towel. Arrange 1 seet of phyllo so that the long end (18 inches) is in front of you. Cut phyllo in half to make two 14 by 9-inch sheets. Brush each sheet with melted butter and sprikle with chili powder. Fold each sheet in half to make two 14 by 4 1/2 inch pieces. Place 2 tablespoons of filling at one end of piece. Fold in one-half inch of each long side, slightly covering filling, then fold into packages. Continue making packages until filling is used. Place each package seam down on a jelly-roll pan and brush with melted butter. (At this point, the packages may be covered with a damp paper towel, sealed with plastic wrap, and refrigerated up to 1 day in advance.)
When ready to bake, bring the packages to room temperature. Preheat oven to 375 degrees. Bake 15 to 20 minutes until lightly browned. Serve with Salsa Fresca.

Ingredients 1-7 are for the Salsa Fresca. Ingredients 8-20 are for the Packages.

Tips:
The packages may also be folded "flag style" to form triangular packages.
