Ham, Cheddar & Peach Sandwiches
A perfect start to any party!

1/4 pound Black Forest ham, (honey cured or smoked)
1/4 pound sharp cheddar cheese, white or Dry Monteray Jack
1/2 cup American Spoon Peach Preserves
2 teaspoons horseradish
1/4 teaspoon Tabasco sauce
1 1/2 pounds pumpernickel bread, seeded rye or whole wheat

Cut away baked edges from ham slice. In a food processor bowl, combine ham, cheese, preserves, horseradish and Tabasco. Process until a fine puree. Remove to a sealed container and refrigerate until ready to use.

Cut away crust edges from bread. Thinly spread one slice of bread with ham mixture and top with a new bread slice. Stack sandwiches and return to plastic bread bag. Seal and refrigerate. To serve, slice each sandwich into thirds or quarters and place on doily lined tray.
