Lemon Curd Filling
Great filling for the Miniature Cream Puffs!

Cook Time: 0 minutes


2 eggs
1 egg yolk
1/2 cup sugar
2 teaspoons lemon peel, grated
3 tablespoons fresh lemon juice
1/4 cup butter

Combine all ingredients in top of double boiler, cook over hot water, stirring occasionally, until mixture is as thick as mayonnaise (about 30 mintues). Chill. Using a teaspoon, fill puffs.
