Homestyle Good Morning Casserole
Makes a wonderful side dish!

Cook Time: 40 to 45 minutes


4 slices bread, crust trimmed
6 eggs
1 1/2 cups skim milk
4 slices turkey bacon, cooked, crumbled
1/4 cup lowfat Swiss cheese, shredded, divided
1/4 cup lowfat cheddar cheese, shredded, divided
1/3 cup sliced mushrooms
1/4 teaspoon seasoned salt
1/2 cup frozen hash brown potatoes

Place bread slices, slightly overlapping, in bottom of lightly greased 9x9-inch baking dish. In large bowl, thoroughly combine eggs, milk, bacon, 2 tablespoons Swiss Cheese, 2 tablespoons Cheddar cheese, mushrooms and salt. Pour mixture over bread slices. Sprinkle potatoes over egg mixture and top with remaining Swiss and Cheddar cheese. Cover and refrigerate overnight. Bake at 350F, uncovered, until lightly browned and knife inserted near center comes out clean, about 40 to 45 minutes.
