Cold Olive Soup
A soup that is great as a quick cold lunch.
Serves: 1 gallon
Prep Time: 15 minutes
Cook Time: 0 minutes


2 quarts plain nonfat yogurt
12 cups olives, sliced
1 cup green onion, diced
1 cup green pepper, diced
1/4 cup fresh parsley, minced
to garnish freshly ground pepper
to garnish olives, sliced

Combine all ingredients, except garnish, and mix thoroughly. Chill overnight.

At service: Portion into bowls and garnish with pepper and olives.
