Crown Roast of Lamb w/Cornbread Stuffing
Lamb with cornbread stuffing make this meal different.

Cook Time: 60 or more minutes


1 lamb roast or 12 lamb rib chops
1/3 cup dry sherry
1/3 cup orange juice
1/2 cup mixed dried fruit
1 1/2 cup cornbread stuffing mix
1/2 cup mushrooms
1/4 cup chopped pecans
1/2 teaspoon salt
1/4 teaspoon rosemary, crushed
1/4 teaspoon thyme, crushed

Combine sherry and orange juice; soak dried fruit in sherry mixture for 15 minutes. Combine cornbread stuffing, mushrooms, pecans, rosemary, amd thyme. Add sherried fruit mixture. Place a small piece of foil under center of roast to hold stuffing; place lamb on rack in shallow roasting pan; fill center with stuffing. Cover the rib ends of roast and stuffing with foil to prevent over browning, Roast at 375 degrees for 20-25 minutes per pound or until met thermometer registers 145-150 degrees for medium-rare or 10 degrees for medium.
