Quick Blender Latkes
Fresh made latkes are a breeze with this simple blender recipe that's as easy as it is good!
Serves: 4 servings

Cook Time: 20 minutes


6 medium potato, peeled and thinly sliced (about 6 cups)
3 eggs
1 medium onion, thinly sliced (about 1/2 cup)
6 tablespoons olive oil
2 tablespoons matzo meal
salt & pepper
2 cups natural, unsweetened applesauce

Place 2 cups potatoes, 1 egg, and about one third of the onion in a blender or food processor. Blend until the mixture is smooth. Pour the mixture into a large bowl and repeat twice with the remaining ingredients.
Stir 2 tablespoons olive oil and the matzo meal into the potato mixture. Season to taste with salt and pepper.
Heat the remaining olive oil in a 12-inch skillet over medium-high heat. Carefully spoon about 1/4 cup of the potato mixture into the skillet, making 4 latkes at a time. Cook for 6 minutes or until the latkes are golden brown, turning once. Drain the latkes on paper towels. Repeat with the remaining potato mixture.
Serve the latkes with the applesauce.
