Toasted Mushroom Bacon Sandwiches
These Toasted Mushroom Bacon Sandwiches are delicious and easy to make!

1/4 pound fresh mushrooms
2 tablespoons butter
1/4 pound sharp cheddar cheese, grated
1 large egg, lightly beaten
1/2 teaspoon salt
12 thin slices white bread
12 slices tomato, 1/2 inch thick
6 strips bacon, halved

Rinse, pat dry and chop mushrooms (makes about 1 1/4 cups). Heat butter in a medium skillet. Add mushrooms and saute until golden, 3 to 5 minutes. Remove pan from heat. Stir in cheese, egg and salt, set aside. Using a 2 inch round cookie cutter cut bread into circles. Place a tomato slice on each bread circle. Spread mushroom-cheese mixture over tomatoes. Top each sandwich with a piece of bacon. Arrange sandwiches on a broiler tray. Place under a preheated hot broiler until bacon is crisp and cheese is bubbly.
