Pineapple 'N' Ham Sandwich Roll-Ups
Interesting tortillas and really great sandwiches. If your kids don't like pineapple, use plain cream cheese instead.
Serves: 4-6
Prep Time: 15 minutes
Cook Time: 20-25 minutes


6 6-inch corn tortillas
1 container (8 ounces) cream cheese with pineapple, softened
1/4 cup walnuts, chopped
1/8 teaspoon pumpkin pie spice
1 package (6 ounces) ham, thinly sliced (about 18 slices)
6-12 lettuce leaves

In small bowl, combine cream cheese, nuts and spice. Mix well.

For each roll-up, briefly warm the corn tortilla on both sides in non-stick skillet (about 1 minute). Do not brown. Cool slightly but work with them while they are still warm and pliable.

Spread about a sixth of the cream cheese mixture over the tortilla to within 1/2 inch of edge. Lay 3 thin slices of ham on top of the cream cheese, overlapping across the center of tortilla. Top with 1 or 2 lettuce leaves.

Roll up and wrap securely in plastic wrap. Refrigerate until serving or packing in a cooler for transport.

Note: You can also make these with wheat flour or whole wheat flour tortillas (about 6 1/2- to 8-inch size). It is not necessary to heat wheat flour or whole wheat flour tortillas before making roll-ups because they are naturally more pliable.
