Baby Italian Roasters
This dish will become a family favorite.

Cook Time: 60 minutes


4 small russet potato
1/4 cup onion, chopped
1/2 cup shredded mozzarella cheese
1 tomato, sliced
1 teaspoon Italian seasoning

Preheat oven to 350° F. Wash and thinly slice potatoes; leave skins on. In a large bowl, mix together the potatoes, onions, tomato, and seasoning. Place on a greased sheet pan, and top with cheese. Bake for 45-60 minutes. Potatoes will be golden brown and tender. Salt and pepper to taste, if desired.
