New Age Potato Salad
A new twist on an old favorite!
Serves: 6
Prep Time: 15 minutes
Cook Time: 30 to 35 minutes


6 cups russet potatoes, thick sliced, unpeeled
1/2 pound bacon, cooked crisp, drained, and broken up
2 hard boiled eggs, chopped
1/4 cup green onions, thin slice
1 cup green beans, blanched, in 1/2 inch pieces
1 cup mayonnaise
salt and pepper, to taste

Preheat over to 425 degrees. Place the Wisconsin potatoes on a cookie sheet that has been sprayed with non-stick spray. Bake 30-35 minutes turning once until tender and golden. Mix mayonnaise, bacon, eggs, onions, green beans and salt and pepper in a large bowl. Add potatoes and toss gently to mix. Serve warm or cold. Garnish with parsley.
