Apricot Vinaigrette
Try this vinaigrette on your next salad.
Serves: makes 1 cup

1 can (16 ounces) apricot halves, drained
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 large garlic clove
1 teaspoon fresh thyme
2 tablespoons water

In blender, combine apricot halves, balsamic vinegar, garlic, thyme and water. Blend until smooth. With blender running, slowly add olive oil, blend until smooth.
