Fruit Pepper Salsa
When the peaches are ripe, try this combo of fruits and vegetables. Pears work well, too. It is a delicious topping for grilled meats or fish. Make it more or less peppery depending on your taste.

2 peaches, or pears
1 red bell pepper
1 green bell pepper
2 tablespoons minced cilantro
1/2 cup apple juice, or pear juice
1 tablespoon Dijon mustard
fresh ground black pepper, to taste

Halve, peel, remove the pit, and slice the peaches or core and thinly slice the pears. Trim and seed the bell peppers and then dice them. Combine the sliced fruit, peppers, cilantro, juice, and mustard. Add the black pepper to taste.

Serve with barbecued fish steaks or fillets.
