Lemon Prune and Apple Salad for All Seasons
Serve this zesty fruit salad with a simple meal. It can stand on its own with some hot, tender buttermilk biscuits as a light supper.

1 head romaine lettuce, cored, washed and chopped
1 cup lemon flavored prunes
1 cup coarsely chopped apples, such as Red Delicious
1/2 cup thinly sliced red onion
1/3 cup walnuts, toasted
3 tablespoons chopped yellow onions
2 tablespoons cider vinegar
4 teaspoons honey
1 tablespoon vegetable oil
1/2 teaspoon salt
2 teaspoons poppy seeds

In salad bowl, toss the lettuce, prunes, red onions, apples, walnuts, and yellow onions.

In a blender, combine the vinegar, honey, oil, and salt and process until smooth. Pour into a small pitcher and stir in the poppy seeds.

Dress the salad with the dressing and serve immediately.
