Steamed Squash with Chives
Chives enhance the mild flavor of squash.
Serves: 4
Prep Time: 10 minutes
Cook Time: 8 minutes


2 medium-size zucchini
2 medium-size summer squash
3 tablespoons butter
2 tablespoons chopped fresh chives
freshly ground pepper

Cut the zucchini and the squash into 1/4-inch slices.

Fill the bottom of a steamer with enough water to come to within an inch of the steamer tray. Cover the steamer and bring the water to a simmer over medium heat. Put the zucchini and squash on the steamer tray, cover the pan and cook for 8 minutes.

Heat the butter in a heavy saucepan over low heat. Add the chives and cook for 2 minutes. Add the steamed zucchini and squash and toss. Season with salt and pepper to taste and serve immediately.
