Carrot and Scallion Stir-Fry
Fresh, young carrots and tender scallions make this a fresh-tasting dish. Plus it's fast and easy!
Serves: 10 to 12
Prep Time: 15 minutes
Cook Time: 5 to 7 minutes


1/2 cup chicken broth
2 pounds carrots, trimmed, peeled and grated
4-5 slender scallions, chopped, white and green parts
2 teaspoons dried tarragon
Salt and freshly ground pepper

Heat the chicken broth in a large non-stick frying pan over medium-high heat until very hot.

Add the carrots, scallions, and tarragon and stir-fry for 2 to 4 minutes, or until the carrots are hot but still crisp.

Season with salt and pepper to taste and serve immediately.
