Hot Chocolate
Welcome the kids home from sledding or ice skating with a pot of rich, creamy hot chocolate.

Cook Time: 5 minutes


2 ounces bittersweet chocolate
2 tablespoons sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
4 cups scalded whole or low-fat milk, kept warm

Put the chocolate in the top of a double boiler set over hot, not simmering water. When the chocolate has melted, add the sugar, salt and vanilla and stir until the sugar dissolves.

Add the milk and beat vigorously with a whisk until frothy. Serve immediately.
