Grated Carrot Salad
A tasty and healthy side dish.

4 large carrots, peeled and cut into 3-inch lengths
2 tablespoons canola oil, pure olive oil, or extra-virgin olive oil
1 tablespoon lemon juice, fresh
2 tablespoons parsley, finely chopped
salt, to taste
freshly ground pepper, to taste
1/2 teaspoon sugar, optional

Grate the carrots. Toss carrots with the oil, lemon juice, parsley, salt and pepper and sugar, if needed.
