Grilled Lemon Chicken
Lots of lemon juice makes this chicken moist and delicious.
Serves: 4 to 6
Prep Time: 15 minutes
Cook Time: 35 to 40 minutes


2 (3-pound) chickens, quartered
2 tablespoons grated lemon rind
1/2 cup lemon juice, fresh
4 cloves garlic, crushed
1 teaspoon black peppercorns, crushed
1 teaspoon green peppercorns, crushed and canned
1/2 cup olive oil
2 red onions, cut into 1/4-inch slices

Combine the chicken pieces, lemon rind, lemon juice, garlic, peppercorns and olive oil in a large bowl. Toss until the chicken is thoroughly coated. Cover the bowl and let the chicken marinate in the refrigerator, turning occasionally, for 3 to 4 hours.

Heat the broiler or light the charcoal grill.

Put the onion slices on a plate and brush them with some of the marinade. Lift the chicken from the marinade and put the dark meat on a broiler pan or grill. Cook the dark meat under the heated broiler or on the very hot grill for about 15 minutes, turning and basting frequently with the marinade. Add the pieces of white meat and the onion slices to the pan and cook for another 20 minutes. Serve as soon as all the chicken is crisp and golden.
