Warm Tomato and Zucchini with Vinegar
Sprinkle the vegetables with 1/4 cup of grated Parmesan cheese just before serving.
Serves: 4 to 6
Prep Time: 5 minutes
Cook Time: 6 minutes


4 tablespoons olive oil
1 pound small zucchini, thinly sliced
2 tomatoes, chopped, juice reserved
1 onion, thinly sliced
1/4 pound mushrooms, thinly sliced
2 to 3 tablespoons white wine vinegar
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh chives

Heat the oil in a large frying pan over medium heat. Add the zucchini, tomatoes, onion and mushrooms and cook for about 5 minutes, until the vegetables are tender.

Add the vinegar, thyme, chives and the reserved tomato juice and cook for 1 minute. Transfer the mixture to a bowl, toss and serve immediately.
