Turkey Fajitas
Once you make these fajitas, your kids will be begging for them night after night!
Serves: 4

Cook Time: 5 minutes


1 1/2 pounds turkey breast, sliced and uncooked
1/2 teaspoon ground cumin
1 juiced lime
2 teaspoons Crisco® Vegetable Oil
8 flour tortillas
lettuce, shredded
sour cream, or plain yogurt
1 (8-ounce) container guacamole
1 (8-ounce) jar salsa
Sprigs of fresh coriander
freshly ground pepper

Heat the oven to 350 degrees.

Rub the turkey pieces with the cumin and coriander and put them in a shallow non-aluminum bowl.
Add the lime juice and oil and turn the turkey pieces to make sure they are well coated. Marinate for 10 minutes.

Meanwhile, wrap the tortillas in foil and heat in the oven for about 10 minutes until warmed through.

Heat the broiler. Sprinkle the turkey pieces lightly with salt and pepper and broil for 2 to 3 minutes until opaque on one side. Remove the thinner slices at this point as they will be cooked through. Turn the remaining slices and broil for about 1 minute more until cooked through.

Cut the turkey slices into 1-inch-wide strips and serve wrapped in the warmed tortillas and topped with the lettuce, sour cream, guacamole, salsa and coriander sprigs.
