Roasted Onion and Garlic Mashed Potatoes
Mashed potatoes, the ultimate comfort food, are even more yummy when flavored with roasted onions and garlic. This recipe makes enough for a crowd -- but who cares? You can never have too many mashed potatoes!

Prep Time: 10 minutes
Cook Time: 1 1/4 hours


2 cups white onions, diced 1/4 inch
1/4 cup coarsely chopped garlic
1 tablespoon olive oil
4 1/2 pounds Idaho potatoes, peeled, cut in half
8 cups water
6 tablespoons butter
1/2 cup sour cream
2 teaspoons salt
1/2 teaspoon fresh ground black pepper

Preheat oven to 350 degrees. Toss the first three ingredients together to combine. Place in ovenproof baking dish; cover tightly with foil. Bake for 45 minutes until tender. Remove from oven and set aside. Place potatoes and water in large saucepan and bring to a boil over high heat.

Reduce to medium heat and cook for 20-30 minutes until tender. Drain well. Do not let cool. Place potatoes, roasted onions, butter, sour cream and seasonings in stainless bowl or mixer bowl. Mash or whip until just fluffy and combined. Do not over beat. Keep warm until serving.
