Swanson® Easy Potato Pancakes
A shortcut method using instant potatoes with delicious results--the choice is yours to cook the pancakes with or without oil until golden brown.
Serves: 4 pancakes
Prep Time: 5 minutes
Cook Time: 15 minutes


1 can (14 oz.) Swanson® Chicken Broth (1 3/4 cups)
Generous dash pepper
1 1/2 cups instant mashed potato flakes or buds
1 green onion, coarsely chopped

HEAT broth and pepper in saucepan to a boil. Remove from heat. Add potato flakes and onion and stir until liquid is absorbed. Shape potato mixture into 4 (4") pancakes.

COOK pancakes in nonstick skillet until browned on both sides.
