Skinny Potatoes
Potatoes simmered with Swanson® Chicken Broth deliver a low-fat side dish that's a good source of iron and an excellent source of Vitamin C with full satisfying flavor.

Cook Time: 5 minutes


3 1/2 cups Swanson® Chicken Broth (Regular, Natural Goodness or Certified Organic)
5 large potatoes, cut into 1-inch pieces (about 7 1/2 cups)
Generous dash ground black pepper

HEAT broth and pepper in saucepan to a boil. Remove from heat. Stir in potato flakes until liquid is absorbed.

TIP: For creamier potatoes, add 1/4 cup milk and 2 tbsp. butter.
