Pace® Scrambled Tortilla Eggs
For breakfast or dinner, these sophisticated eggs sport the bold flavor of Pace® Picante Sauce, smooth melted cheese and the crunch of tortilla chips. Garnish servings with sliced avocado and extra picante.

Cook Time: 15 minutes


8 eggs, beaten
1 cup Pace® Picante Sauce
2 tbsp. butter or 2 tbsp. margarine
1 cup shredded Monterey Jack cheese
1 cup crumbled tortilla chips
1 large avocado, peeled, pitted and sliced

MIX eggs and 2 tbsp. picante sauce.

HEAT butter in skillet. Pour in egg mixture. As eggs begin to set, stir lightly so uncooked egg mixture flows to bottom. Cook until set but still moist. Stir in cheese and chips.

HEAT remaining picante sauce in saucepan. Spoon over eggs. Top with avocado. Serve immediately.
