Wild Rice, Quinoa & Herbs
This is a lovely, flavorful side dish. It’s packed with nutrients, minerals, and antioxidants-filling you with vitality!

Cook Time: 60 minutes


1 cup wild rice
4 cups water
1 cup Quinoa
1 1/4 hot water
1/2 tablespoon miso paste
1 teaspoon virgin olive oil
1 medium red onion, sliced thinly
1/4 teaspoon seasalt
1 teaspoon Italian herbs, dried
1/4 cup vegetable stock
1 cup Parsley, chopped finely
3 medium scallions, chopped
2 tablespoons almond slices or slivers
3 parsley sprigs

In a sauce pan, bring wild rice and water to a boil. Reduce heat, and simmer for about 50 minutes, until tender but still chewy. Strain rice and set aside.

Place quinoa in a fine strainer and rinse with water. In a sauce pan, bring water to a boil. Add rinsed quinoa. Reduce heat, stir in miso, and simmer 20 minutes. Remove from heat. Set aside.

Heat a saute pan over medium heat and add oil. Add onion, salt, herbs, and saute 2 minutes. Add stock, steam a few seconds. Stir in cooked rice and quinoa, parsely, and scallions. Simmer covered 2-3 minutes, stirring occasionally.

Serve warm or chilled. Garnish with almond slivers and parsley sprigs.
