Dried Fruit Chutney with Coriander
This fruity chutney is delicious with turkey, chicken, or pork. Or spoon it over a cracker spread with cream cheese as an hors d'oeuvre or snack.
Serves: about 2 1/2 cups

1 1/2 cups apple cider
3 tablespoons sugar
1 tablespoon cider vinegar
1 tablespoon coriander seeds, lightly crushed
1 teaspoon black peppercorns
1/2 cup chopped dried figs
1/2 cup chopped dried apples
1/4 cup golden raisins
1 tablespoon finely chopped crystallized ginger
1 large tart apple, peeled, cored, and thinly sliced

In a non-reactive saucepan, combine the cider, sugar, vinegar, coriander seeds, and peppercorns. Bring to a simmer over medium heat and cook for about 15 minutes. Strain through a fine-mesh sieve into a bowl. Discard the coriander and peppercorns.

Return the liquid to the pan, add the dried fruit and ginger. Bring to a simmer and cook gently for 8 to 10 minutes or until the fruit is soft. Add the apples and continue cooking for about 20 minutes longer or until the apple slices soften. Cool to lukewarm.

Transfer to a lidded glass, ceramic, or plastic container, cover, and refrigerate until ready to use. The chutney keeps for about a week.
