Rice pudding? Why not? This is a wonderfully crazy combination and if you haven't tried it, you must!

Kids love the creamy, soothing flavor of rice pudding, and it's easy enough for them to make themselves as soon as they're old enough to cook on the stove.

The Secret of Rice Pudding
The trick to creamy rice pudding is in the kind of rice. Instant rice (Minute rice) is not a good choice - it will never get creamy enough. Instead, use regular medium- or long-grain rice.

The pudding itself is a simple mixture of milk and sugar stirred into the rice and then cooked into a creamy pudding.

Simple Rice Pudding
To make the simplest rice pudding, cook rice as directed on the box just until the water is absorbed. Remove the pan from the heat and stir in milk and sugar.

From here, it's a matter of gently cooking and stirring the pudding until the milk is absorbed and the pudding is creamy. At this point, take the pan from the heat and stir in vanilla and perhaps a little cinnamon.

Chill the pudding before serving. Press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming.

Chill the pudding for at least an hour, although you can leave it overnight. Pull off the plastic wrap and dig in!

Other Rice Puddings
Some folks like even creamier rice pudding and some like baked pudding with currents or raisins.

To make light but exceptionally creamy rice pudding, fold sweetened whipped cream into chilled rice pudding.

If you prefer more classic European-style baked rice pudding with raisins, follow this method.

Bring milk to a simmer and remove it from the heat. Add a small amount of the hot milk to two eggs and sugar, whisking all the while to prevent the eggs from cooking (this is called "tempering"). Pour the egg mixture back into the remaining hot milk.

Stir cooked rice, raisins, and vanilla into the hot milk mixture and then pour this into a buttered oven-proof bowl or individual custard cups.

For creamy, luscious pudding, it's advisable to cook it in a water bath. The water promotes gentle cooking and keeps the pudding moist.

To prepare a water bath, line the bottom of a large roasting pan with a dishtowel. Position the dish of pudding in the pan on top of the towel. The towel keeps the dish from sliding in the pan. If using custard cups, make sure they don't touch each other.

Put the pan on the oven rack and carefully pour enough boiling water into the pan to come halfway up the sides of the dish or custard cups.

Bake the pudding for 50 to 60 minutes, until just firm and a knife inserted into the center comes out clean. Serve baked rice pudding warm or cold.
