Easter Menu

Create a wonderful and traditional Easter meal with these suggested recipes.

There are dozens of traditional foods to serve on Easter Sunday. For example, pastel-colored eggs are nestled into sweet breads in Italy as well as some European countries.

We've chosen to begin our meal with Cream of Spinach Soup. The bright green soup makes a not-too-filling beginning for an excellent dinner. It can be made a couple of days ahead and it freezes well.

If you are not baking a ham, we suggest the traditional roast lamb with new potatoes and English peas. Other vegetables that go with lamb include spinach, carrots, asparagus, white beans and French flageolets.

Wonderful to cook on an outdoor grill, lamb is a storehouse of nourishment. It is an excellent source of protein, and contains several B vitamins and iron and zinc. A 3-ounce portion of lamb from the shank half of the leg has just 153 calories, and about 6 grams of fat.

Go ahead and cheat and buy a lemon pound cake for dessert. Serve it with fresh, sliced strawberries and sweetened whipped cream.
