This is a new century and many red-bloodied Americans may actually prefer fish to steak on this patriotic holiday. Grilled tuna is as satisfying as sirloin or flank steak, although if you prefer, either one goes well with this menu.
Buy the tuna from a reputable market and make sure it is as fresh as can be. It should smell of the ocean -- not in the least fishy. Store it in the rear of the refrigerator, which is the coldest area, in its original packaging. Cook it within 24 hours of purchase.
Potato salad is always welcome in the summertime and if you are pressed for time, buy it at a good deli or specialty store. Making it yourself is easy--it requires about 15 minutes of your time.
If you can find good tomatoes, serve a sliced tomato salad with this meal. Otherwise, make a simple green salad and toss it with a light dressing, perhaps one made with lemon juice in place of vinegar.
A loaf of crusty French bread, purchased at the local bakery or market, rounds out this meal.
