Some tricks of the trade for this meal plan:
Try a Cuban twist on chili. This Picadillo is a Cuban treat that derives its sweet and sour taste from olives and raisins. It can be made a few days in advance and kept in an airtight container in the refrigerator. To make serving easier, reheat the Picadillo in a crock-pot. It can then sit out on your buffet table during an entire football game and guests can help themselves as they please.
Flavorful breads add depth to any menu. Instead of making traditional cornbread, this time try making corn muffins, which will stand up far better on a buffet than do crumbly slices of cornbread. Be creative with the muffins and add jalapenos or roasted red peppers to the batter. Serve them just as they are or with hot pepper jelly. Cheese bread goes a long way with this menu, too, and can be made the day before and kept in an airtight container. These muffins and the bread are the perfect accompaniments to the Picadillo and beer!

This surely is a no-fuss, make-ahead meal! The Polynesian Ribs and both desserts can be made ahead and kept in the refrigerator. The only things you will need to make the day of your party are the artichoke nachos and carrot salad. Be sure to make plenty -- all this food will be good for leftovers, if you have any!
