Some tricks of the trade for this meal plan:

  • Acorn squash is roasted with other vegetables and sprinkled with brown sugar to accent its natural sweetness. Substitute butternut, delicata, or table queen (golden acorn) squash instead.
  • Both the meaty portobello mushrooms and sliced red onions are roasted well ahead of time for the salad. This tenderizes and sweetens them deliciously. If you prefer, use plain white mushrooms or creminis. You will have shorten the roasting time by about 20 minutes for the smaller mushrooms.
  • Pork loin is tender and succulent. If you prefer, substitute two pork tenderloins for the pork loin and reduce the cooking time by about half. Always check for doneness by using an instant-read thermometer, which should read 155 to 160 degrees F. when the meat is done.
