Peanut Butter Bars
These baked, crunchy peanut butter bars are really good...but when topped with a peanut butter frosting, they become almost impossible to resist!

1/2 cup brown sugar
1 cup Jif® extra crunchy peanut butter
1/2 cup Crisco® all-vegetable shortening
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup milk
2 tablespoons butter, softened
2 cups sifted confectioners' sugar
light cream




Heat the oven to 350ºF.
Mix the brown sugar, 2/3 cup peanut butter and shortening in a large bowl using an electric mixer on medium-high speed. Add the eggs and vanilla and mix well. Stir the flour, baking powder and salt in a medium bowl. Add the flour mixture to the peanut butter mixture alternately with the milk, beating after each addition until well mixed. Spread the mixture in a greased 13 x 9 x 2-inch baking pan
Bake for 30 minutes or until the edges are lightly browned. (The center will be slightly soft.) Cool the baking pan on a wire rack.
To make the frosting, beat 1/3 cup peanut butter and the butter in a medium bowl with an electric mixer on high speed. Slowly beat in the confectioners' sugar and enough light cream to make the frosting spreading consistency. Spread the frosting over the cooled mixture in the baking pan. Cut the mixture into 36 diamond-shaped bars.
