Sweet Potato Pie
This luscious pie has all the holiday flavors you'd expect, but it's made from sweet potatoes instead of pumpkin...and since it uses a store-bought frozen crust, making it is as simple as pie.

2 medium sweet potato or yams (about 1 pound), peeled and cut into 1-inch pieces
2 eggs, beaten
3/4 cup packed dark brown sugar
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
2 teaspoons vanilla extract
1 frozen 9-inch pie crust
3/4 cup sweetened whipped cream




Heat the oven to 425°F.   Place the potatoes into a 3-quart saucepan and add water to cover.  Heat over medium-high heat to a boil.  Reduce the heat to low.  Cook for 15 minutes or until the potatoes are tender.  Drain the potatoes well in a colander.
Mash the potatoes in a large bowl.  Stir the eggs, brown sugar, cinnamon, nutmeg, ginger, allspice, vanilla extract and evaporated milk in the bowl until the mixture is smooth.  Pour the potato mixture into the pie crust.
Bake for 5 minutes.  Reduce the oven temperature to 325°F.
Bake for 40 minutes or until set.  Let the pie cool in the pan on a wire rack for 20 minutes.  Serve the pie with the whipped cream.
