Savory Chicken & Rice
Sophisticated and simple...it doesn't get any better than this easy-to-make skillet dish featuring sautéed chicken in a creamy white wine-Dijon sauce.

Vegetable cooking spray
2 cups broccoli florets
6 ounces mushroom, sliced (about 2 cups)
4 skinless, boneless chicken breast half (about 1 pound), cut into 1-inch pieces
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1/4 cup milk
1/4 cup Chablis or other dry white wine
1 tablespoon Dijon-style mustard
1 cup instant white rice, prepared according to package directions (about 3 cups)




Spray a 10-inch skillet with the cooking spray and heat over medium heat for 1 minute.  Add the broccoli and mushrooms and cook until the broccoli is tender-crisp, stirring occasionally.  Remove the vegetables from the skillet.
Remove the skillet from the heat. Spray the skillet with the cooking spray and heat over medium-high heat for 1 minute.  Add the chicken and cook until well browned, stirring often.  Remove the chicken from the skillet.
Stir the soup, milk, wine and mustard in the skillet and heat to a boil.  Return the vegetables and chicken to the skillet.  Reduce the heat to low.  Cover and cook for 5 minutes or until the chicken is cooked through.  Serve the chicken mixture with the rice.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
