Favorite Chocolate Cake

1/2 cup shortening
2 cups sugar
2 eggs, beaten
1/2 cup boiling water
1/2 cup unsweetened cocoa powder
Pinch instant coffee powder, dissolved in 1 tablespoon water
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 1/4 teaspoons baking soda
1 cup milk
1 teaspoon vanilla extract




Heat the oven to 350°F. Grease (8-inch) round cake pans.
Beat the shortening and sugar in a large bowl with an electric mixer on medium-high speed until the mixture is light and fluffy. Add the eggs and beat until well mixed.
Stir the boiling water, cocoa and coffee powder mixture in a small bowl. Stir the cocoa mixture into the shortening mixture.
Stir the flour, salt and baking soda in a medium bowl. Stir the milk and vanilla in a small bowl. Add the flour mixture and milk mixture alternately to the shortening mixture, beating well after each addition.
Divide the batter evenly between the prepared cake pans. Bake for 40 to 45 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool the cakes in the pans on wire racks for 10 minutes. Remove the cakes from the pans and cool completely on the wire racks.
Serving Suggestion: Frost the cakes with your favorite frosting after cooling.
