1 large seedless orange, peeled and finely chopped
1 tablespoon red onion, finely chopped
1 tablespoon fresh mint, finely chopped
1 tablespoon red or green pepper, finely chopped
1 teaspoon orange juice




Combine all ingredients in a medium-sized bowl. Cover and refrigerate for 30 minutes to 1 hour. Do not let the chutney stand too long or it will start to lose its fresh flavor and texture.
