1 1/2 cups wild rice, (omitting the seasoning blend)
1 tablespoon flat leaf parsley
1 tablespoon rosemary, chopped fresh or 1 tablespoon dried
1 tablespoon fresh thyme, chopped fresh or dried
1/4 cup olive oil
1 1/2 pounds flank steak
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup dry red wine
1 medium onion, chopped
1 garlic clove, minced
1 (28 ounce can) peeled whole tomatoes in juice
1 tablespoon flat leaf parsley, chopped fresh
1 tablespoon fresh thyme, chopped fresh or 3/4 teaspoon dried
1/8 teaspoon hot pepper flakes
3 large red bell peppers
3 large yellow bell peppers
1 small onion, chopped
2 celery stalks, chopped
3 garlic cloves, minced
2 ripe medium tomatoes, peeled. cored, seeded and chopped
1 tablespoon hot pepper flakes, or hot pepper sauce
salt and pepper, to taste
12 thin slices mozzarella cheese
1/4 cup freshly Grated Parmesan cheese
