Spinach with Raisins and Pine Nuts

1/3 cup golden raisins
3 pounds fresh spinach, coarse stems discarded
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/3 cup pine nuts, toasted




Soak raisins in warm water 10 minutes. Drain. Steam spinach over medium-high heat until leaves are tender, about 2-3 minutes. Drain. Cool and pat dry.
Heat olive oil in a large skillet over medium heat. Add garlic. Saute until garlic begins to turn opaque. Add spinach. Cook, stirring frequently, 1 minute. Stir in salt, pine nuts, and raisins. Adjust seasonings. Continue to cook 3 minutes. Serve immediately.
