Persimmon Cookies
These cookies really are uniquely delicious.

Cook Time: 13-15 minutes
 
1 cup persimmons, pulp (3 or 4 ripe persimmons)
1/2 cup shortening
1 1/2 cups sugar
2 cups sifted flour
Pinch salt
1/2 teaspoon soda
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1 cup chopped nuts
1 cup raisins
1 egg, beaten
1 teaspoon vanilla




Put persimmons through a food mill or strainer and measure 1 cup pulp. Set aside. Cream shortening and sugar. Combine flour, salt, soda, cinnamon, cloves and nutmeg; mix with nuts and raisins. Add to creamed mixure. Stir in persimmon pulp, egg and vanilla. Drop from teaspoon onto greased cookie sheets. Bake at 375 degrees for 13-15 minutes.
