3 tablespoons unsalted butter
2 cups onion, thinly sliced
1 tablespoon all-purpose flour
2 large eggs
1 cup milk
1 teaspoon salt
1/8 teaspoon freshly ground pepper
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives
1 1/2 teaspoons fresh tarragon, chopped
1 1/2 teaspoons fresh basil, chopped
1 cup Shredded Cheddar cheese
1 9 inch pie crust, unbaked, deep dish
1 tomato, thinly sliced

Preheat oven to 425 degrees. Melt butter in a large skillet. Add onions and saute until tender. Sift in flour. Set aside. Beat eggs and milk in a small bowl. Add salt, pepper, parsley, chives, tarragon, and basil. Place sauteed onions and cheese into pie crust. Cover with egg mixture. Bake 15 minutes. Reduce heat to 350 degrees. Bake an additional 15 minutes. Arrange tomato slices on top of pie. Bake until tomatoes begin to brown, about 10 minutes.
