Sour Cream Pecan Waffles

3 large eggs, separated
3/4 cup milk
1/2 cup unsalted butter
1 cup sour cream
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
1/2 cup chopped pecans, lightly toasted and cooled

Whisk egg yolks in a large bowl until light. Add milk, butter, and sour cream. Stir until smooth. Combine flour, baking powder, baking soda, and sugar in a separate large bowl. Sift flour mixture into egg mixture, blending well. Stir in pecan pieces. Beat egg whites until stiff. Carefully fold egg whites into the batter with a spatula. Spray a waffle iron with nonstick cooking spray. Cook waffles on a hot waffle iron until golden brown. Serve hot with maple syrup or fresh fruit.
