Oatmeal and Berry Pancakes

2 cups rolled oats
2 cups buttermilk
2 large eggs, beaten
4 tablespoons unsalted butter, melted and cooked
1/2 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon cinnamon, ground
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups blackberries




Place oats in a food processor and process 10 seconds. Combine oats and buttermilk in a large bowl. Cover and refrigerate overnight. Whisk eggs and butter into oat mixture. Combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Add to oat mixture. Spray a griddle with nonstick cooking spray. Cook pancakes on a hot griddle until batter bubbles and the bottom is golden brown. Sprinkle a few berries on each pancake before turning. Turn and brown other side. Remove to individual plate. Garnish with fresh berries. Serve with hot maple syrup.
