Golden-Crusted Persian Rice

2 cups basmati rice
4 tablespoons unsalted butter, (1/2 stick)
2 tablespoons Crisco® Vegetable Oil

Bring a large pot of generously salted water to a boil over high heat. Add the rice and boil for 7 or 8 minutes, or until barely tender. Drain, rinse under cold running water, and drain again.

In a heavy-bottomed saucepan, melt the butter with the oil over medium heat . Remove half of the fat and set aside, then remove the pan from the heat.

Add 2 tablespoons water and rice to the saucepan.
Pour the reserved fat over the rice. Lay a double thickness of moistened cheeseloth on the rice, cover tightly and cook for 15 minutes over low heat. Increase the heat to medium-low and cook for 5 minutes longer, or until the rice is tender and a golden crust has formed at the bottom of the pan. Remove from heat and let stand for 5 minutes.

Using a large spoon, scape up the rice crust from the bottom of the pan, mixing it with the rest of the rice. Transfer the rice to a heated bowl or platter and serve.
