2 cups basmati rice, uncooked
3 1/2 cups water
1/2 teaspoon salt
1 tablespoon lemon zest, finely grated

1. Combine the rice, water and salt in a 3-quart saucepan and bring to a boil over high heat. Stir once, reduce heat, cover and simmer for 15 to 20 minutes or until the liquid is absorbed.
2. Remove from the heat. Stir in the lemon zest, cover and let stand for 5 minutes before serving.
