Fresh Tomato Sauce with Pasta
Serve this fast and easy meal when the tomatoes and basil are fresh and ripe. Chunky pasta such as corkscrews or penne work well, but if you prefer, serve it with fettuccine or linguine.

2 lbs. fresh tomatoes
2 bunches fresh basil leaves, torn
1 tbsp. minced garlic
1/3 to 1/2 cup extra virgin olive oil
1 lb. corkscrew pasta, or penne
Salt and freshly ground pepper




Core the tomatoes and chop into 1/2-inch chunks. Transfer to a bowl and add the basil and garlic. Drizzle with olive oil, toss to coat, and set aside at room temperature for at least 30 minutes and up to 2 hours.

In a large saucepan of lightly salted, boiling water, cook the pasta for 10 to 12 minutes or until al dente. Drain and return to the cooking pot. Add the tomatoes to the hot pasta, toss to mix and season with salt and pepper. Serve immediately.


Serving Suggestion:  Serve with garlic bread found in the freezer case.
