Classic Basil Pesto
When the basil is fresh and abundant, make pesto with grated Parmesan, a few cloves of garlic and some great olive oil. Serve it with sliced, tomatoes, on sandwiches, or tossed with hot pasta.

2 1/2 cups fresh basil leaves
2/3 cup grated Parmesan cheese
1 - 2 cloves garlic
2/3 cup extra virgin olive oil

In the bowl of a food processor fitted with the metal blade, combine the basil, Parmesan, and garlic. Pulse 2 to 3 times or until the basil and garlic are chopped.

With the motor running, pour the olive oil through the feeding tube in a slow, steady stream. Process until the olive oil is absorbed and the ingredients are well mixed. It won't be completely smooth.

Serve right away or transfer to a container and refrigerate for up to 3 days. Let the pesto come to room temperature before serving.
